i. Biography
Seafood fine dining is a discipline of restraint: sourcing, cut, temperature, seasoning, timing, and service all have to resolve before the plate reaches the dining room. The Trajectory
Classical French training supplied the early structure for this work. Culinary school in Perpignan, France, gave Eric Ripert the formal base before Paris kitchens set the pace and hierarchy of the trade. At La Tour d'Argent from 1982 to 1984, the work was grounded in the discipline of a major French dining room. Station work in Paris narrowed that training toward fish. At Jamin, Eric Ripert served as Assistant Chef de Partie from 1984 to 1985, then as Chef Poissonier from 1986 to 1989. That progression matters: the poissonier station demands control over cooking windows, portioning, saucing, and the fragility of seafood under service pressure. The move to the United States extended that French formation into American fine dining. Eric Ripert worked as Sous Chef at Jean Louis at the Watergate Hotel in Washington, D.C., from 1989 to 1991, then as Sous Chef at Bouley in New York in 1991.
