Aaron Bludorn’s work reads as a study in accumulation: technique first, then volume, then responsibility. The line runs from Culinary Institute of America, Hyde Park, to a small diner on Bainbridge Island in Bainbridge Island, then through Café Boulud in Manhattan, New York City, and finally into Houston, where Bludorn and Navy Blue anchor his current practice. The Climb
At Culinary Institute of America, Hyde Park, Aaron Bludorn picked up the formal base that kitchen work demands: discipline, repetition, and respect for technique. Since 2020, Bludorn has held the Partner and Executive Chef role at Bludorn in Houston, Texas. Since 2022, he has also been Chef/Owner at Navy Blue in Houston, Texas, extending the same city-based work into a second named venue.
