Simon Martin is the chef-owner of Mana in Ancoats, Manchester, which opened in 2018 with business partners Joel Adams and Michael Holden. Mana won Manchester its first Michelin star in 42 years in 2019, and Martin has been identified in coverage as a former Noma chef and Warrington-born.
