The Climb
Sushi training at Sushi Yoshitake in Ginza, Tokyo, Japan set the base: a trainee sushi chef role in a house with a clear discipline around form and timing. From there, Sushi moved through chef posts at Michelin-starred restaurants in New York, USA, and in Hong Kong, building range across different dining rooms without leaving the sushi frame.
Today
At Sushi Oya in Kagurazaka, Shinjuku, Tokyo, Japan, Sushi works as chef.
Signature
Delicately steamed abalone and a tuna trio sit at the center of Sushi’s signature service, showing a hand that works with restraint and precise contrast rather than excess.
