At Bodega Colomé, the work is built around one plain rule: great fruit leads the wine. Thibaut Delmotte, French and from Bourgogne, France, brought a Burgundian discipline to Salta, where altitude, travel, and patience shape cellar decisions as much as any tool or routine. Burgundy training and years in various wineries at France until 2004 gave Delmotte the practical base for cellar work: harvests, fermentations, and the day-to-day repetition that defines the job long before a wine is ever released. In 2005, he became second winemaker at Colomé in Argentina, and since 2006, Thibaut has served as the main winemaker of Colomé, directing the house style with a focus on balance, freshness, and concentration. His method is built on timing. “We look for freshness and concentration in our wine but no green or Jamy character so we can’t pick too soon or too late!” That balance is the point: not overripe, not underdone, but fruit that can read clearly.

Signature

Thibaut Delmotte’s signature wines include Altura Máxima Malbec, Altura Máxima Pinot Noir, Altura Máxima Sauvignon Blanc, Colomé 1831 Malbec, and Colomé El Arenal Malbec. Together they show the range of his work at Bodega Colomé: wines shaped by place and by a preference for clarity, energy, and structure.
