Timo's signature wines include Sloe Gin. Sloe Gin carries the lineage in plain view: a dark-fruited, aromatic style with enough character to hold attention on its own, without leaning on novelty. For Marshall, Sloe Gin functions as both product and reference point, linking the family recipe to the distillery’s wider language of making. It is a signature that shows how a specific inheritance can become the basis for a broader house style.

In Their Words “We originally thought we would join up with a small distillery, share Timo’s family’s recipe, and bring the Sloe Gin into the market that way.” This frames the first plan as a practical one: use an existing distillery, place the recipe in a production setting, and move the spirit outward from family use to trade. The emphasis is on route and execution, not romance. Marshall’s early thinking was about finding a workable path for an inherited recipe. “It was there that we discovered the lack of grain to glass spirits, where our passion came in, and the idea started to grow.” The pivot came from a market gap, not from a rebrand. Once Marshall and the team saw the shortage of grain to glass spirits, the concept expanded around that opening. The line marks the shift from a limited distribution idea to a fuller production philosophy, with the business growing out of what the category lacked.
