Valéry Grégo is a French hotelier and the founder of Perseus Hotels. He created Hôtel du Couvent in Nice from a restored 17th-century convent and also developed a portfolio that includes Le Pigalle in Paris and Les Roches Rouges in Saint-Raphaël.
