The Climb
The Intensive Professional Program in French Cuisine at FERRANDI Paris, France (2013–2014) gave Vanessa Huang the grammar: repetition, precision, and the standards that shape French culinary training. Training under Chef Pascal Barbot at L'Astrance in Paris, France brought that grammar into service, where ingredient focus and restraint are learned through daily execution rather than theory. The sequence is straightforward: first the structure, then the application. Since 2014, the chef-owner role at Ephernité has been the practical extension of that training. Vanessa Huang runs a kitchen where authorship shows up in revision, not in fixed formula.
