Grinder judgment at the counter

Patrik Rolf weighs grinder choice by the cup, not by doctrine. As founder and Chef at April in Østerbro, Copenhagen, he keeps the question close to the counter: what gives the coffee more clarity, and what gets in its way. His own language is plain about that discipline. “For me, there is a lot of good different grinders on the market.” He has also said that electric grinders, in his experience, tend to generate better cup quality than hand grinders, while refusing to dress that view as laboratory proof. The position suits the room. April is a coffee roastery rooted in Denmark, and Rolf’s work here sits between roasting, brewing, retail, equipment and the repeated small decisions that make those words matter. He trained at Five Elephant, where the foundations of his approach were laid before April became the center of his present work. The lineage is not presented as theatre. It shows in restraint, in the refusal to overstate, and in the way taste remains a practical matter: bean, grinder, water, brewer, cup.

From bean to cup, kept visible

The program at April is built around roasting coffee and progressing the way that roasting is done. The house describes itself first as a roastery, and the categories around it tell the rest of the method: filter beans, espresso beans, limited beans, organic beans, April House Coffee, drip packs, capsules, brewing accessories and coffee recipes. That is not a cafe bolting on a retail shelf. It is a roastery cafe where the counter and the home brewer sit in the same field of attention. Guests can order espresso or filter coffee, then buy beans to take the same roast back to their own bench. The April Brewer and April Filter Drip Pack extend that thinking into objects and formats, keeping Rolf’s focus on clarity rather than ceremony. What is clear is the architecture: everyday house coffee, more limited releases, and tools for repeating the method beyond the room.

A bright room behind Sortedams Sø

The Østerbro cafe sits behind Sortedams Sø, with a known address at Ryesgade 86A, 2100 Copenhagen. The room is bright and calm, with understated furniture and the kind of quiet that lets the grinder sound like part of the service rather than interruption. Counter service keeps the movement direct. Beans, bags, brewers and cups share the same visual field, so the roastery identity does not have to be explained at length.
