Since January 2011 at the pass
The nightly menu changes before the room sees it. Justin Cogley, Executive Chef at Aubergine Carmel in Carmel-by-the-Sea, works from the pass inside L’Auberge Carmel with Alec Moreno, Chef de Cuisine, beside the station. Cogley joined the restaurant in January 2011 and now oversees all culinary programs at the house, a long tenure in a dining room built for close reading rather than volume. Before Carmel, he spent four years at Charlie Trotter’s in Chicago, two of them as chef de cuisine, then served as executive sous chef for the Elysian Hotel’s kitchen opening. That training shows here less as biography than as habit: the cut of salmon tartare, the spacing of herbs, the way a coastal ingredient is allowed one clear line on the plate. Aubergine earned two Michelin stars in 2025 under Cogley’s leadership, and the restaurant also holds a five-star Forbes Travel Guide rating and Wine Spectator’s Best of Award of Excellence, both first named here in 2014. Seaweed, abalone, and a changing menu
Cogley’s program is seasonal, coastal, and built around a tasting menu rather than choice from the table. The kitchen draws heavily on local produce and seafood, with Carmel Beach seaweed and Monterey Bay abalone among the ingredients most closely tied to the place. The abalone has particular weight here, raised for the restaurant since opening and often treated with enough technique to change its texture without obscuring its origin. Dishes have included oyster with yuzu emulsion, artichoke tart, ayu with potato squash, grilled abalone, and a cabbage taco layered with shallot jam, Madeira-braised treviso, Kaluga queen caviar, and cabbage chips. The method favors small movements: a ring of finely chopped salmon tartare with creme fraiche, egg, micro herbs, and salmon eggs; a wagyu beef cracker with pickled mustard seeds; fish held firm against an herbal sauce and brioche. The wine program works with a 2,500-bottle cellar, leaning into Monterey County and France while staying close to the menu’s rhythm.
A quiet room off the courtyard
The room holds 22 seats at 9 tables, which changes the craft. Plates do not travel far from the pass, and the dining room can take the tempo of the kitchen without losing its composure. Aubergine sits within L’Auberge Carmel, a restored 1929 building that became the hotel’s signature restaurant when the property opened in 2004. The room keeps a restrained palette: arched windows, dark crossing beams, muted sea-green kelp-inspired curtains, wood, fabric, glass tile. It is intimate without becoming precious. Service moves formally, but the scale keeps it human; a tasting menu can be tailored table by table because the kitchen and floor are working at close range. Outside, the courtyard carries the older house’s European line. Inside, the pass belongs to Cogley, Moreno, and the small room that makes every gesture visible.
