    Gray shrimp at the edge of the pass

    As a first gesture, the boucots went to the fryer. Gauthier Delbé is the executive chef at Beau Boucot in Saint-Michel-Chef-Chef, and his signature reads through an iodized menu of well-constructed plates that let product quality carry the work. The house belongs to Mathieu Guibert and Claire Bâcle, who also hold the starred Anne de Bretagne in La Plaine-sur-Mer, and Guibert’s standard sits behind this bistrot de la mer without turning it into a second dining room. The name is local before it is anything else: boucot is the Tharon-Plage word for the small gray shrimp that fishermen harvest at low tide in front of the restaurant.

    Beau Boucot itself was shaped as a bistrot marin by Mathieu Guibert and Claire Bâcle, the pair behind Anne de Bretagne in La Plaine-sur-Mer. The place takes its name from the local boucot, the small gray shrimp gathered around Tharon-Plage at low tide. That choice gives the room its first discipline. The seafood is not an accessory to the view; it is the working subject. Gauthier Delbé leads the kitchen now, and the plates associated with the restaurant keep close to product, sauce, and timing rather than decoration.

    The menu is built for a seaside bistro that still wants the hand to show. Fried gray shrimp arrive as the namesake bite, simple enough that the oil, salt and shell have nowhere to hide. Red tuna appears in dual cookings with lemon and caper mayonnaise. Smoked trout sits on an acidulated sauce. Zucchini carries a paella emulsion; blueberry tartlet takes sage chantilly and sorbet into the same sequence as the fish.

    The house works à la carte and also offers a menu découverte, but the craft is clearest in the way the kitchen moves between sharing and precision. Seafood platters, oysters, clams and the “De chair et d’iode” idea keep the table generous; the individual plates ask for a tighter pass. Smoking, confit, emulsions and careful sauces do the work. The wine program follows the same coastline of thought, with Loire and Nantais bottles chosen to sit beside iodine, shellfish, smoked trout and tuna rather than overwhelm them.

    A bright room facing Grande Plage

    The room faces Grande Plage de Tharon, where the pêcheries stand in the Atlantic light and the tide gives the restaurant more than scenery. Inside, blue and white striped banquettes, nautical detail and tables made from repurposed shells keep the place in register with the shore without turning it into a theme. The counter of attention is still the pass: plates leaving hot, shells arriving cold, wine poured with enough ease to leave the food in front.

    Service has the pace of an upscale casual room, professional and young, with enough warmth for families and enough discipline for diners following the cooking. The Bib Gourmand belongs to Beau Boucot, and it reads here less as ornament than as a measure of the bistro’s chosen lane: seafood, sauce, Loire wine, and a table close to the beach.
