Pastry discipline at the creamery bench

A batch begins with dairy, fruit, and the restraint of pastry; Anne Walker, chef at Bi-Rite Creamery in San Francisco, carries that habit into the scoop counter. Her path to this bench did not begin with ice cream. She studied at Hampshire College, then worked pastry stations at Cypress Club, Stanford Court Hotel, and Slow Club in San Francisco, rooms where repetition and timing mattered before a guest ever saw the plate. In 2002 she joined Bi-Rite Market as pastry chef, moving the same discipline into a neighborhood food business with a closer daily relationship to its customers. In 2006 she co-founded Bi-Rite Creamery, keeping the work near pastry while changing its form: custard bases, fruit, cookies, toffee, cakes, pints, and the cold arithmetic of texture. The house was started by two bakers, and that origin still explains the method. The flavors read like ice cream, but the thinking is pastry: balance first, then intensity, then the clean finish that lets a second spoonful make sense.

Small batches, local dairy, handmade inclusions

The program rests on housemade, seasonal, small-batch desserts, with locally sourced ingredients and organic dairy at the base. Straus Family Creamery milk, cream, and eggs have been part of the work since the beginning, giving the creamery a fixed starting point before fruit or chocolate enters the mix. Guittard Chocolate Company, Valley Ford Creamery, Ritual Coffee Roasters, and seasonal fruit growers sit in the same circle of suppliers, not as decoration but as flavor structure. The menu holds 24 flavors, with signatures and limited runs moving beside one another. Salted Caramel stays close to the core. Orange Cardamom marks the seasonal side. Masumoto Peaches arrive as fruit, not as an idea of fruit. The inclusions matter as much as the base: almond toffee for Ritual Coffee Toffee, chocolate cookies for Cookies and Cream, toasted seed brittle and almond butter in Maple Adventure Crunch. Each addition changes chew, melt, and sweetness, so the bench has to solve more than flavor.

The counter across from the park

The room works at counter-service pace, bright and loud enough to feel lived in, with a line that moves because the format asks for decision rather than ceremony. Families, regulars, and park-bound customers gather near the case, reading the day through names of fruit, caramel, coffee, chocolate, and spice. The place is small, and that scale suits the craft; the distance between the bench and the counter feels short even when the queue reaches the door. Nothing in the room tries to make ice cream solemn. The seriousness stays in the base, the inclusions, and the season. A scoop of Salted Caramel can sit beside Orange Cardamom, but the same hand has to answer for both.
