    The restaurant sits within a cherry orchard on the Vistalba estate, south of Mendoza, and the room keeps to that quiet. Its rustic-modern interior is warm rather than theatrical; the service has the practiced calm of a house that knows how few guests it can properly hold. With only 18 guests per service, the counterpoint is not bustle but attention. Plates move through the pass in close sequence. The room hears them.

    That intimacy shapes the craft as much as the menu does. A tasting menu for a small dining room can carry finer adjustments than one built for volume, and Brindillas has stayed with that constraint for years.
