Gerbais in Celles-sur-Ource
Aurélien Gerbais leads the fourth generation of Champagne Pierre Gerbais in Celles-sur-Ource. The family’s roughly 18 hectares include Pinot Noir, Chardonnay and Pinot Blanc. Its Ampelos certification dates to 1996, after a change in vineyard management during the 1990s.
Two ways of composing a wine
Recent Grains de Celles cuvées use one harvest. The named parcel wines, including Champ Viole, La Loge and Les Grandes Côtes, combine a base harvest with reserve wine. That distinction changes the role of vintage and reserve wine in each bottle.
Technical details by bottle
Coquard pressing and a pied de cuve fermentation start are documented for the domaine. Published accounts differ on its use of wood, stainless steel and sulfur, so a technical sheet for the particular cuvée is needed before assigning one protocol to the range.
