The gesture comes from a long apprenticeship in French kitchens: École Ferrandi, a trainee post at Goumard Prunier until 1996, then the stations at Les Prés d’Eugénie-les-Bains from 1996 until 1998, where he moved through intern, cooking assistant, semi-chef de partie, chef de partie, and saucer chef. In 1998 he went to Restaurant Louis XV de Monaco as third cooking assistant, then through Hôtel Matignon and the Plaza Athénée in Paris before the sous-chef years at Lasserre from 2001 to 2004. He has led La Vague d’Or at Cheval Blanc St-Tropez since 2004, and in Paris he carries that sauce-led language into Plénitude, the hotel’s 3 Michelin star dining room.

    The room moves on timing

    Plénitude depends on more than the plate. Alexandre Larvoir, director of Plénitude at Cheval Blanc Paris, holds the service floor in a register of exact timing and ease. His work is guest service orchestration: the pause before a course, the decision to step forward or leave a table alone, the adjustment that keeps attention personal without making it heavy.     A house cut from Samaritaine

    Cheval Blanc Paris sits inside the former La Samaritaine department store, remade as a 72 room maison under LVMH Hospitality. Peter Marino’s design uses warm color, high-end materials, Art Deco references, and the kind of marble bathroom that slows the room down before service even begins. The public spaces stay light-filled rather than theatrical, with graphic palettes, beautiful lighting, and a conversational noise level that suits a hotel built for intimacy rather than scale. The Dior Spa below carries another kind of craft: the world’s first Dior Spa, with Paris’s longest indoor 30-meter pool, mosaics, hammam, sauna, snow shower, and a vast gym. Above, the views hold the Seine, Pont-Neuf, and the city’s harder silhouettes, but the house keeps the attention close to hand: leather, parchment, patina, a plate arriving with its sauce already given the first word.

    The Paris address of a sauce language

    The Saint-Tropez house earned its 3 Michelin stars in 2013; Plénitude holds its own 3 Michelin stars at Cheval Blanc Paris. That distinction matters because Donckele’s work is not being borrowed from another dining room. It has been rebuilt here inside a hotel with four restaurants, a Dior spa, and a small number of rooms by palace standards. Larvoir’s floor and Cadieu’s wine program give the Paris address its own tempo. At Plénitude, a sauce can arrive alone, and the 30-meter pool downstairs belongs to the same house.
