His station sits inside the Oliva family line in Sanità, where Concettina began selling fried pizzas in 1951 near the Tre Santi newsstand. The origin was not a dining room story. It was an oven, a window, and fritta passed into the street.

    Four generations later, Olivo holds the family business as a working pizzeria rather than a museum of inheritance. He took over at 18, and the useful fact is not youth by itself, but repetition at that age: dough, heat, toppings, service, the return to the same gestures until the room trusts them. Naples gives little cover to a pizzaiolo. The form is local, public, argued over, and judged by people who know the difference between softness and slackness, between char and scorch, between tradition and costume.

    Fritta roots, new-pizza nerve

    The method keeps its center in high-hydration dough, wood-fired baking, and the short, fierce timing that leaves a Neapolitan pizza with a swollen cornicione and a tender middle. Olivo’s menu works both sides of the family inheritance. Fried starters recall Concettina’s street work: arancini, crocchettone with sausage, provola and friarielli, and montanara, where dough is fried, then baked, then finished with tomato, smoked provola, Pecorino Romano and basil.

    On the pizza side, the Margherita remains a test of restraint, with tomato, mozzarella and basil carrying the whole structure. Around it, Olivo allows the bench more reach: smoked provolone with taralli crumbs, anchovies with mozzarella and lemon zest in La Partenopea, porcini with two cheeses in Sole nel Piatto. The pizzeria has served five Margherita variations, a small declaration in a city where one version can already expose every weakness. For Napoli Pizza Village 2018, the house made Pizza Fondazione San Gennaro with salami, provola, tomato and tarallo. The toppings change the register, but the base still has to do the old work.

    The room carries Sanità’s pressure close to the table. It is lively, sometimes chaotic, with the muffled indoor sound of a small pizzeria working hard and the outdoor terrace taking in the neighborhood’s movement. This is not a hushed temple built around pizza as an object. It is a working room, with the counter, the pass and the oven all inside the same field of attention.

    That texture matters because Olivo’s cooking is visible here. A pizza leaves the bench, crosses the pass, and meets people who have either grown up with the form or traveled to test it at the source. Beer and limoncello keep the beverage side direct; the house does not ask the drink to overtake the dough. The clearer measure is daily execution in Sanità, where Sott'e ngopp, Margherita and Friarielli all return to the same fire.
