The program spans Chardonnay, Pinot Noir, Pinot Gris, Syrah, Cabernet Sauvignon, Riesling and Sauvignon Blanc, with still white, still red, sparkling and rosé all part of the house’s range. That breadth asks for calibration rather than spectacle. Pinot Noir may be Webber’s stated specialty, but the cellar has to hold multiple varieties at once, each with its own pressure on timing, picking decisions and élevage. De Bortoli names sustainable production as part of its philosophy, and the work reads best through that lens: a large family-owned winery making cool-climate wine from single vineyard sites, with the cellar door and restaurant sitting alongside the production program rather than apart from it.
