The cellar is his remit

Fruit reaches the winery before the judgment begins; Mike De Iuliis works as winemaker at De Iuliis in Pokolbin, Hunter Valley, with his attention fixed on the cellar. He has put the boundary in his own words: “I’ll never profess to be a viticulturist, I’m a winemaker.” It is a useful line because it keeps the craft honest. The vineyard matters, but his station is the glass, the ferment, the decision to let a wine carry less noise and more definition.

Mike De Iuliis came to that station with study at Macquarie University and Roseworthy Campus, then kept adding the slower education of repetition. His work at De Iuliis sits beside his judging work, including his role from 2024 as chair of judges at Sydney Royal Wine Show. That part of the job asks for calibration in public; the cellar asks for it before anyone else sees the wine. The discipline is the same. Read the fruit, decide what it can carry, and do not force the rest.

Semillon, Shiraz and controlled edges

The house works in Hunter Valley varieties that reward restraint: Semillon, Chardonnay, Verdelho, Shiraz and Merlot, made across still white, still red, still rosé and sparkling wines. The signature named in Mike’s own record is 2017 Aged Release Semillon, a wine that points to the region’s patience with Semillon and to a cellar program willing to hold a bottle until age has done part of the work.

De Iuliis describes its production philosophy as sustainable and its scale as small. That means the hand shows less as display than as control. Definition matters here. So does the decision to keep a label anchored while the wider trade moves around it, with judging panels, show benches and peer assessment continually sharpening the palate that returns to the winery.

Light across the cellar door

The room at De Iuliis is bright and spacious, with floor-to-ceiling windows that pull the outside close to the tasting bench. Manicured gardens, vineyard rows, the Brokenback mountain range and native wildlife sit within view, giving the cellar door a country quiet without making it sleepy. Music stays laid-back.

That setting suits wines made with control rather than volume. The counter does not need spectacle when the work is already in the sequence: Semillon, Chardonnay, Verdelho, Shiraz, Merlot; a cellar door tasting, a winery tour, then the return to what each glass carries. The room frames the maker’s decisions without crowding them.

A judge returning to his own bench

Mike’s public responsibility continues with the Sydney Royal Wine Show, including the chair role attached to the 2025 show. His own words make the weight plain: “The opportunity to be Chair of Judges at the 2025 Sydney Royal Wine Show is a massive responsibility, and one I do not take lightly.” Back in Pokolbin, that responsibility narrows again to De Iuliis and the 2017 Aged Release Semillon.
