Native yeast before the cellar speaks

Native yeasts start the work before the wine is pushed into form. François de Nicolay, winemaker at Domaine Chandon de Briailles in Savigny-lès-Beaune, keeps the cellar close to that first movement, with Pinot Noir and Chardonnay from the estate’s Burgundian ground carrying the argument. His route to the bench did not begin as a cellar apprenticeship. In Paris, he worked in wine distribution and ran his own shop in Pigalle until 2001, learning bottles from the market side first: how they move, how they are handled, how a wine meets the person who will live with it. Since 2001, he has co-managed Domaine Chandon de Briailles, while also working as owner and négociant under his own name. That double position matters here. One role asks him to hold continuity at an historic estate; the other lets him work with the discipline of a négociant. At the domaine, the signature remains holistic, biodynamic, and low-intervention, with the vineyard setting the terms and the cellar refusing to overstate them.

No pumping over, no hurry

The method at Domaine Chandon de Briailles is stated plainly: native yeasts, no pumping over, no filtration, no sulfur in some bottlings, and hand bottling by the chevre a deux becs method. Those choices make the work slower and less corrective. They also keep the wine near the material it came from, rather than sanding it into a house gloss. Demeter certification followed in 2011, giving formal shape to a biodynamic practice already framed by restraint. The estate works in Savigny-lès-Beaune AOC, with Pinot Noir and Chardonnay as its principal grapes, and its reputation rests on Premier and Grand Cru vineyard material in Savigny-lès-Beaune and Corton. The wines named with François include Corton Blanc and Mercurey Les Montelons, cuvées made to age and to reveal themselves gradually. He has said he likes the wines after 10 years here, naming 1998, 1991 and 1990 as bottles he now likes to drink. The comment is less nostalgia than cellar logic: time is part of the method.

Clay-limestone under quiet cellars

The place itself keeps a low register: hillside plots, clay-limestone soils, old vines, and traditional Burgundian cellars. The tasting happens close to the work, in the cave and barrel room, rather than in a room designed to separate the bottle from the conditions that made it. There is refinement in that restraint, and a rustic edge that belongs to the countryside around Savigny-lès-Beaune. The cellar is quiet enough for small gestures to count: the absence of pumping over, the decision not to filter, the hand work at bottling. In a region where lineage can become decoration, Domaine Chandon de Briailles holds to practice. The final word here is not the label, but the slow opening of Corton Blanc.
