    Brown celery jus before the pass

    A brown celery jus meets bergamot foam before the plate leaves Andreas Krolik, chef at Lafleur in Frankfurt on the Main.     Krolik trained at POS Erdeborn in 1981, then held head chef posts at Brenners Park-Hotel & Spa and Tiger-Restaurant at Tigerpalast Varieté Theater before taking the Lafleur station. That path matters because the cooking at Lafleur depends on sequence and control, not novelty alone.     A vegan menu with its own architecture

    In 2014, Lafleur introduced a vegan 6-course gourmet menu, described as the first of its kind by a Michelin-starred chef in Europe. Krolik did not treat it as an accommodation. He gave it structure: decoctions, creams, crunches, foams, purees and jus, using vegetables and fruit as the base material for length and pressure. White asparagus can carry chicory decoction, smoked paprika, spice macadamia crunch and black miso cream. Daikon can meet leaf pesto, radish marinade, cucumber and yuzu peel.

    The fish side keeps its own grammar. Raw marinated king salmon appears with Rhône caviar, watercress, iced yogurt and orange. Norwegian lobster can carry tandoori kaffir lime leaf sauce, pumpkin, sweet potato, bell pepper chutney, pink grapefruit and macadamia rice crunch. The vegan work and the fish work do not collapse into one another. They share a method: layer by layer, brightness against fat, bitterness against sweetness, crunch against cream.

    The room looks onto Siesmayer

    The room gives the kitchen a green frame without turning it into scenery. Lafleur sits within the Gesellschaftshaus Palmengarten, with views toward the Siesmayer flower parterre, and the dining room takes some of its calm from that outlook. Frankfurt presses close outside, but at the table the register is quieter: formal service, warm decoration, glassware set for a serious wine program, plates arriving with little wasted motion.

    The Palmengarten around it is a 150-year-old botanical garden with 54 acres and 13,000 plant species. Those figures do not explain the cooking, but they sharpen the context. Vegetables make sense here because the place keeps putting the plant world in the eye line. Krolik’s kitchen answers that view with celery, daikon, asparagus and the vegan 6-course gourmet menu.
