    Memory comes first at Norma in Guimaraes. Miguel Marques has led the kitchen there since March 2025, working a tasting menu that asks personal material to hold its shape through service. The house was opened on a vision brought home by Hugo Alves, who came back to his native Guimarães after working in leading Portuguese restaurants and set the restaurant on regional pride expressed in contemporary form. Marques inherited that frame rather than replaced it, and guests through 2025 and 2026 describe the same precision across fish, meat and dessert.

    Norma holds a useful tension: a contemporary Portuguese room with a menu built as a life story. The restaurant is in Guimaraes, a city whose old stone does not need theatrical help, and the kitchen works in the opposite direction. It makes its fiction explicit, then asks the food to justify it course by course. The staff carry that structure to the table in careful English, which is part of the same discipline as the plating.

    A life story set in courses

    The central method at Norma is narrative. The tasting menu follows the fictional life of a character named Norma, with each dish taking a chapter rather than a conventional menu category. The idea could collapse into theme if the kitchen let it; here it depends on recognizable craft. A childhood beach memory can arrive through tuna tartare with brioche, a mussel rissole, or a small Francesinha-inflected sandwich. A later passage through Japan has been described through salmon three ways, cured, seared, and tartare. A return home can become a fish stew riff. Retirement may appear as a potato-like dessert served with chocolate dirt and garden fork cutlery.

    The house’s own signatures keep the conceit anchored in flavor rather than explanation. Crab profiterole with tomato and basil, Bràs potato, and celery feijoada with sesame and orange all speak in a Portuguese register without staying inside inherited forms. Local sourcing matters here, but not as a label. Mussels, cuttlefish, lamb, duck, turbot, bread with butter, and alheira-infused olive oil give the kitchen material with weight. The dining format allows both tasting menu and à la carte, though the tasting sequence is where the house’s structure shows most clearly.

    The terrace and the old building

    The room does not announce itself loudly from the street. Norma occupies an old building on R. Dr. José Sampaio, and part of its effect comes from that modest approach: the work opens after entry, not before it. Inside, the design is warm and airy, with chosen color, soft light, and an intimate scale. The terrace looks toward São Gualter church, giving the room a specific Guimaraes frame without turning the meal into scenery.

    Service has to carry the story as much as the kitchen does. The courses need introduction, but too much explanation would flatten the gesture, so the balance sits in pacing and language. The wine program follows the same line, curated around local wines with cocktails alongside them. Norma holds a Michelin Bib Gourmand in the 2025 Guide, a trade signal that fits the room’s scale: invention, value, and control measured at the same table.

    What the next plate has to prove

    Norma’s continuing task is not to add more plot. It is to keep the story edible, precise, and local enough that the fiction never outruns the pass. This is the kind of plate that shows whether that discipline is holding on R. Dr. José Sampaio.
