Ku’s formal base came through Harvard University and the Culinary Institute of America, and the discipline of that training shows in a kitchen built around Taiwanese food served cleanly, directly, and without theatrical handling.
At Pine & Crane, Ku’s role has never been only the pass. She has owned the restaurant since 2014 and worked here as chef since 2017, shaping both the menu and the room around food that stays accessible while keeping its definition. That matters in a counter-service restaurant, where the guest may meet the work first through speed, ease, and repetition. The chef still has to make the hand visible: in the folding of a scallion pancake, the seasoning of a wonton, the way mapo tofu, three cup chicken, and beef noodle soup sit beside cold appetizers and vegetables without the menu losing its center.
The Pine & Crane method is not built on a single showpiece. It is a program of familiar Taiwanese forms held to a narrow line: crisp against soft, chile against soy, broth against noodle, pork against rice. Thousand Layer Pancake, Spicy Shrimp Wontons, Beef Roll, Dan Dan Noodles, and Minced Pork on Rice are the dishes most closely tied to Ku’s kitchen, and each one depends on control more than flourish. A beef roll needs structure before generosity. A wonton has to carry its filling cleanly. Dan Dan noodles do not forgive slack seasoning.
The restaurant also works with a wider bench of Taiwanese staples: three cup chicken, beef noodle soup, mapo tofu in pork and vegan versions, Taiwanese popcorn chicken, panfried pork buns, marinated cucumber, basil eggplant over rice, and three cup mushroom. At the Downtown Los Angeles room, the morning side of the program brings purple rice fan tuan, daikon rice cakes, and a vegan-friendly rice porridge set. Loose-leaf teas from Taiwan keep the beverage side close to the food rather than decorating it from a distance.
The Downtown Los Angeles Pine & Crane sits in South Park, at street level, with counter ordering and an open seating plan that lets the kitchen’s rhythm reach the room without turning it into performance. Wood, concrete, natural light, and an outdoor patio give the space a plainspoken texture. It is a restaurant made for a bowl, a plate shared across the table, and the kind of return visit where the order changes by one dish, not by mood.
That ease is part of Ku’s craft. She has said, “Food is always a reflection of a region's culture, history, climate, etc, and we are lucky with great agriculture nearby and our people.” At Pine & Crane, that thought lands in practical terms: vegetables treated as central, Taiwanese flavors kept legible, and a room where the counter does not diminish the work happening behind it.
Ku now carries the same register across Pine & Crane and Joy, the newer Los Angeles kitchen where she has worked as chef since 2024. The connection is not a copied menu so much as a shared discipline: tradition held close, execution kept clean, and comfort allowed to remain direct. At Pine & Crane, the through line still gathers around the dishes that made the kitchen’s hand visible, especially the signature pancake and shrimp wontons, plus Minced Pork on Rice, Dan Dan Noodles, and Beef Roll.
