Born in Bogotá, trained at Hofmann School of Hospitality and Le Cordon Bleu, Clavijo built his discipline through kitchens in Paris, New York and Denmark before defining his authorship at El Chato in Bogotá, where he has been founder and head chef since 2017. At Ventorrillo El Chato, the work asks for another kind of listening: a historic room on the Cádiz side of Cortadura beach, a seafood table with deep local memory, and a menu that does not need spectacle to make its point. The house’s known language is Andalusian and Mediterranean, with fish, shellfish, rice and wine from Cádiz doing much of the carrying. Clavijo’s quoted architecture, “My cooking is French, my ingredients are Colombian, and my organization is American,” belongs to his broader practice, but the sentence also explains why a kitchen like this can absorb his rigor without losing its accent.
The program here is built around the sea rather than a single signature plate. Tortillitas de camarones set the tone, thin shrimp fritters whose success depends on batter, oil, heat and restraint. Prawn potato salad sits closer to the counter tradition, while tuna tartare, fresh fish and squid stuffed Andalusian style pull the menu toward the cold station, the grill and the pan in turn. The rice work matters because it belongs to Cádiz appetite as much as to restaurant craft: Señorito rice with red prawns and small peeled prawns offers the comfort of shellfish without the hands-on labor at the table, while black rice with cuttlefish brings ink, depth and a darker register. The kitchen also keeps deboned bull’s tail in red wine among the meat options, a reminder that the house is not only a beach-facing seafood address. A tasting menu is available for guests who want the kitchen to set the order, but the craft is plainest in the à la carte rhythm, where frying, grilling, rice cookery and wine service have to land together.
The room carries the age of a post house without turning the work into theatre. Ventorrillo El Chato was established in 1780 as an inn and stopping place for travelers, and its position on the breakwater between Cádiz and San Fernando still gives the meal a sense of passage. Antique objects and rustic surfaces hold the eye, and the seafood program fits the building: a plate of fried fish, a glass of oloroso, the smell of rice arriving from the pass, the beach just beyond the walls. The house stands on Cortadura beach, close enough to the water for the setting to feel practical rather than decorative. Service moves through a room that has had a long time to learn its proportions. Nothing needs to be over-explained when the counter, the cellar and the sea are already in conversation.
The restaurant’s national recognition includes the Top Tradition award, and it was distinguished as the only restaurant in Andalusia among the ten best traditional restaurants in Spain in the inaugural Top Traditions Restaurants, part of the Premios Materia Prima. That kind of notice places pressure on continuity rather than novelty. The kitchen has to keep the old gestures alive without embalming them.
