Cabernet decisions at the Sonoma bench

Cabernet sets the first question for Mari Wells Coyle, winemaker at Sebastiani Vineyards & Winery in Sonoma. Her station is not described through theatre, but through decisions that move fruit toward bottle: when to hold a lot separate, when to blend, when to let Bordeaux structure lead and when to give Zinfandel, Chardonnay, Pinot Noir, Sauvignon Blanc, Malbec, Barbera, Merlot, or Rosé its own line. Coyle trained at University of California, Davis, then worked as a winemaker at a small woman-owned winery, David Girard Vineyards, and Sterling Vineyards before becoming Executive Winemaker at One Hope Wine. Since 2023 she has held the Sebastiani winemaker role alongside her work as Vice President of Winemaking for Foley Family Wines & Spirits. The house sits in the Sonoma Valley AVA, a historic winery with a barrel room, tasting room, and outdoor areas among Sonoma vineyards. Coyle's stated aim is plain: "to bring the best fruit to the bottle. Every decision I make is a part of bringing the vineyards to the table in a meaningful way." That is a useful sentence because it keeps the work at the level of the hand, the lot, and the vineyard rather than at the level of brand language.

Bordeaux structure in a broad cellar

Cherryblock Cabernet Sauvignon and Gravel Bed Red are named as Coyle signatures, both pointing toward structure, fruit selection, and the discipline of blending. In a medium-scale winery, that work is often less about a single dramatic gesture than about a sequence of small calls at the bench: fruit condition, extraction, élevage, and the point at which a wine keeps its line without losing the vineyard beneath it. The production philosophy is conventional, and the craft question remains direct. Bring the fruit forward without sanding away its place.

The barrel room and the quiet of the house

The cellar side of Sebastiani carries much of the place's texture. The barrel room is the standout feature, not simply as a backdrop for visitors, but as the room that gives the winery its weight: wood, stone, shadow, and the quiet pace that barrel work asks of a house. The tasting room feels welcoming rather than performative, and the setting holds the expected Sonoma cadence, with vineyards outside, a historic building around the work, and outdoor areas that keep the property open to ceremony and gathering. Nothing here needs to be made louder.
