A hillside cellar in Pott’s hands

Cabernet Franc remains the fixed taste in Aaron Pott’s work. As winemaker at Seven Stones Estate in St. Helena, Napa, he works from a steep hillside estate above Meadowood Resort, where Cabernet Sauvignon, Cabernet Franc, Merlot and Malbec are the stated materials. His training gives the station its particular shape: University of California, Davis, then Université de Bourgogne, then cellar work that moved from Napa Valley to Saint-Émilion and back. He began as assistant winemaker at Newton Vineyard, took winemaker responsibility at Château Troplong-Mondot, added general management at Château La Tour Figeac, and later worked as winemaker at Beringer Wine Estates. At Quintessa Estate, he held the dual role of winemaker and general manager from 2004 to 2006. Since 2007, his practice has widened through Pott Wine, Huis Clos Consulting, Seven Stones Estate and other projects, but the discipline is the same one: read the site, make the cellar decision, keep both accountable to the wine.

Low yields on volcanic ground

The estate works in the red-wine register, centered on Cabernet Sauvignon with Cabernet Franc, Merlot and Malbec in the vocabulary. Its production is small by Napa measures, described as micro-production at 200-500 cases annually, which makes selection and blending less a matter of scale than of consequence. The hillside setting matters here: the property sits in the eastern Vaca Mountains, with low-yielding volcanic soils and a steep exposure over the northern valley. Seven Stones does not publish the full cellar method behind those wines, so the useful facts are the ones the estate does state plainly: still red wines, Napa Valley appellation, a Cabernet-led program, and a maker whose career has been built between academic training and cellar practice. Pott’s own preference keeps one thread visible. “Certainly my taste for Cabernet Franc has not waned since those days.” In a house where the blend includes that grape, the line reads less like a note of affection than a working compass.

The room belongs to the hill before it belongs to hospitality. Seven Stones Estate is intimate and quiet, with a modern-rustic winery, an art collection and panoramic views across northern Napa Valley. The massive granite stone sculpture overlooking the site is not a decorative afterthought; it fixes the estate in memory as firmly as a vineyard wall or a cellar door. Tastings here are private. The important texture is quieter: a hillside above Meadowood Resort, a cellar attached to very small production, a valley below, and Pott working inside a program where the hands have little room to hide behind volume.

A compact Napa vocabulary

Seven Stones Estate holds awards. Its vocabulary remains narrow: four Bordeaux varieties, still red wines, volcanic hillside ground, and an annual production band of 200-500 cases. The concrete thing here is not a claim. It is Aaron Pott’s Cabernet Franc inside Seven Stones Estate.
