That restraint suits Prest's food. Dolomite cooking can lean heavily on comfort, game and winter weight; here the gesture is lighter, with mountain memory carried through saucing, texture and proportion. The wine program is exceptional, and the room has the scale for that work to feel bench-side rather than distant. Nothing needs to be announced loudly. The pigeon breast, the cold spaghetti and the view toward the Tofane do enough.
