Antonino Cannavacciuolo
Chef

Antonino Cannavacciuolo, chef patron and owner at Villa Crespi in Orta San Giulio Novara, cooks memory through modern Italian craft.
Antonino Cannavacciuolo cooks from memory before method; as chef patron and owner at Villa Crespi in Orta San Giulio Novara, he keeps birthplace, welcome, and the pass in the same discipline. His own line is plain: “The roots of my cuisine lie in the land where I was born.” At Villa Crespi, that statement matters because the work has stayed at one address. Cannavacciuolo has been chef patron and manager of the house since 1999, after a formal base at I.S.I.S. “F. De Gennaro,” stages at Auberge de l'Ill in Illhaeusern and Buerehiesel in Strasbourg, and cooking at Grand Hotel Quisisana in Capri.
The lineage is not treated as decoration. Alsace gave him a technical exposure that still appears in the kitchen’s confidence with pigeon; Capri sits behind the ease with which southern memory enters a northern dining room. Villa Crespi’s recognition belongs to this house: a first Michelin star in 2003, a second in 2006, and a third in 2022. Those dates are useful because they show a restaurant built through repetition, not a sudden arrival. The station held.
The kitchen’s Modern Italian frame is clearest where Cannavacciuolo lets one place answer another. “Buon Viaggio” reads as a signature not because it explains itself, but because the title already carries movement. Plin with gorgonzola and mussel cream brings dairy and sea into the same mouthful, a gesture that suits a cook who speaks of hospitality as a way of letting guests discover places they have not been. The dish does not need a map on the plate. It needs the fold, the filling, the seasoning, and the nerve to let mussel cream meet gorgonzola without softening either one.
Pigeon carries a different kind of apprenticeship. Cannavacciuolo has said, “I learned everything I know about pigeons in France, and the best, nicest ones always come from there.” In the room at Villa Crespi, that sentence places French training and French supply inside the same cut of meat. The technique is not published as a formula, and the house does not need to turn it into one. What matters is the traceable route: hotel school, Alsatian kitchens, Capri, then the long station at Orta San Giulio. The hand at the pass has had time to decide what belongs.
Villa Crespi is also a house, not only a restaurant. The address on Via Giuseppe Fava carries lakeside lodging, a spa, and a dining room whose service has to absorb guests arriving for more than a meal. That changes the pressure on the pass. Plates move into a room where travel, rest, and ceremony have already begun; the kitchen cannot rely on spectacle alone. It has to bring focus back to the dish.
The building’s scale gives the restaurant a particular tempo. Corridors, furnished rooms, the garden, and the lake frame the approach before the first course reaches the table. Inside that setting, Cannavacciuolo’s cooking keeps returning to the same claim: place is not backdrop. It is ingredient, memory, and instruction. The luxury here is not loudness. It is the patience to let a plin, a pigeon, or a welcome carry the weight of Villa Crespi.
Cannavacciuolo’s public work has widened since 2015 through judging, hosting, and other restaurants, but Villa Crespi remains the primary bench where his honors are named. The quiet fact is continuity: the chef patron and manager is still here, and the house still has to answer course by course. Villa Crespi’s French lesson is still served by Antonino Cannavacciuolo, with the pigeon.
