The origin.
A dated GaultMillau producer profile identifies Simon Kunfermann and Jacqueline Stgier at Hof Präz and describes ten hectares of range at roughly 1,500 metres by the Hinterrhein. The same source says the farm's products were used at Schloss Schauenstein and that fallow deer saddle repeatedly appeared on its menu in 2021.
