i. Biography
Aaron Verzosa is chef and owner of Archipelago in Seattle. A Filipino American chef with a University of Washington background, his cooking works between Pacific Northwest produce and Filipino American flavors, with the plate doing the job of holding place, memory, technique, and lineage without overstatement.
Coming Up
Training at University of Washington preceded kitchen work as a cook at The Harvest Vine, and that early sequence set the terms for a career built on precision and discipline. In 2010, Aaron Verzosa became r&d chef at Nathan Myhrvold’s publishing company responsible for Modernist Cuisine and Modernist Bread, where ideas had to survive testing, revision, and exacting standards. That role sharpened an already careful practice, one attentive to structure, invention, and the utility of research in cooking. From there, he founded ILAW and, in 2018, became chef and owner of Archipelago. The path reads as cumulative: kitchen work, research-driven development, then ownership. Across those stages, Aaron Verzosa has kept his focus on form, flavor, and the expressive range of Filipino American cuisine in the Pacific Northwest.
Where They Are Now
At Archipelago in Seattle, the work is both authorship and stewardship. As chef and owner, Aaron Verzosa shapes the restaurant’s point of view while carrying the practical burden of ownership, aligning menu, context, and intent. Pacific Northwest cuisine filtered through Filipino American flavors gives the food its register: local in material, specific in lineage, and clear about where it stands. The current style is composed, not showy. Aaron Verzosa’s work at Archipelago continues the through-line that has defined his career since the start: precision, invention, and a willingness to translate tradition without flattening it. The result is a restaurant that reads as a direct expression of craft.
Signature
Aaron's signature dishes include Alaskeros Scallop Kinilaw, Madrona smoked hazelnut suman, and Lola Smith's American Dream. Taken together, they show a range that moves across acid, smoke, nut, and memory without losing control of the plate. The dishes reflect how Aaron Verzosa works: through contrast, texture, and detail, with each element doing specific work. They read as concise statements from a chef whose cooking is built from more than one register.
