The Path
Fermentation science took shape at the University of California, Davis, where Aaron Whitlatch built the technical base that later informed his cellar work. From there, the route moved through process-heavy work in Chicago, Illinois, where he served as a biotech fermentation scientist at Abbott Laboratories. That role sharpened the habits that matter in any controlled transformation: attention to sequence, consistency, and the behavior of material under pressure. In Napa, California, that process discipline met farming. As viticulturist at a premium farming company, Aaron Whitlatch worked closer to the vineyard and the seasonal logic that governs fruit quality. The move from lab to land prepared the next step in his career. He then served as Assistant Winemaker at Mayacamas until 2020, before stepping into his current role as winemaker at Green & Red Vineyard in St. Helena, United States, in 2020.
