The Work Today
Basque grilling at Amaren, under Del Olmo’s fire, is built around traditional txuleton culture with a refined contemporary register. Flame, smoke, char and rest are not effects added at the end; they are stages in a sequence, each one shaping texture, aroma and final eating quality. The work begins with meat selection. Dry-aged beef from local Iberian Peninsula sources is grilled mainly on a bespoke open-fire grill, where control is measured through heat, surface development, rest, texture and the flavor carried by the cut itself. The grill is responsive and unforgiving; the cook’s task is to draw intensity from it without pushing the meat out of balance. Restraint is the mark of the approach. The meat is allowed to register through caramelized edges, yielding interiors and the concentrated savor that comes from age and careful handling. Service depends on the rhythm of fire, removal and rest as much as on the moment the cut reaches the table.
