Albert Kumin earned his place through pastry work that moved from the White House in Washington, D.C, to Windows on the World in New York and then to the Four Seasons in New York. Across those rooms, his desserts gained a reputation for being polished, controlled, and built to hold up under high service. Chocolate velvet cake and Molded Chocolate-Filled Napoleons sat at the center of that reputation, showing a pastry hand attuned to precision and presentation.

Born in Switzerland, Kumin brought an international background to American fine dining. He worked as pastry chef at the White House in Washington, D.C, until 1979, where pastry service carried unusual visibility and constant scrutiny.
