i. Biography
Today
The work at Rocca delle Macie in Castellina in Chianti, where Alessandro Cellai served as technical director, and later at Castellare di Castellina in Chianti, where he was director, was built on a clear reading of vineyard and cellar as inseparable parts of the same craft. Precision, discipline, and balance marked those years, and they remain the practical terms that frame his approach. In that sequence of roles, Cellai established a method attentive to detail without losing sight of the broader shape a wine has to hold. Rocca di Frassinello has been Cellai's base as winemaker since 1999, and Feudi del Pisciotto is where he has worked as winemaker, Head Winemaker and general manager. Across both estates, the task is the same: draw out character while keeping faith with what each place gives. The line running through the work is responsibility to origin, with technique serving the site rather than covering it.
Signature
L'Eterno, Passito Tachis, Nero D’Avola Versace, Davolarosa Brut Rosé, and Moro di Testa are the signatures associated with Alessandro Cellai, and they point to a range shaped by varietal clarity and terroir expression. Each name sits on the label as a working statement of intent: precise, distinct, and tied to the ground it comes from. Taken together, the group reads as a cellar line that values definition without flattening character.
In Their Words “First of all, for me, it’s a great honor to be the winemaker at these two very important estates because I have the possibility to play and to taste the two extremely different terroirs – the Sicilian terroir and the Maremma terroir.” For a winemaker, the practical advantage here is contrast. Sicily and the Maremma are not interchangeable raw materials; each asks for its own judgment in the cellar, and Cellai names that difference plainly. The work is less about repeating a formula than about reading two distinct landscapes and letting each one set the terms. “The real challenge for me is to give every single vintage the real expression of the grape varietal without forgetting the terroir, where the grape varietal was born. That is my real mission, especially in Sicily.” That position puts the vintage and the place in the same frame. Cellai's method is not to override either one, but to hold varietal expression and terroir together, year after year. In Sicily especially, the stated goal is fidelity: let the grape speak clearly, while keeping the site present in the wine's final shape.
