At The Wilderness, Alex Claridge runs the kitchen as Head Chef and Owner. The food sits in Modern British territory, built to provoke, excite, and still land with clear flavour.

Recognition

Claridge is blunt about the pleasures of eating alone, and equally plainspoken about the reference points that shaped his palate. The childhood restaurant he cites is Pizza Hut, a detail he has named without trying to dress it up: “The restaurant I remember from childhood is Pizza Hut. Nobody wants to hear that from a chef, but it is. Sue me.”
