The Climb
At Kentucky Fried Chicken in Portland, fryer work gave Alex Pitts the first lesson: speed matters, but so does consistency. That early station work was followed by an internship at Salish Lodge in Snoqualmie, Washington, where the scale widened and the pace shifted into a more refined kitchen setting. Sous Chef roles at Wolfgang Puck and later at ThinkFoodGroup / Bazaar Meat in Las Vegas, Nevada, added another layer: coordination across moving parts, timing under pressure, and the discipline required when a menu asks for both control and show. Today, Alex is Executive Chef of Bazaar Meat and Bar Mar by José Andrés.

Pitts’s cooking is structured for that setting: bold enough to carry theater, controlled enough to keep the plates aligned, and collaborative enough to depend on a team that can adjust in real time. Signature
The center of Pitts’s signature is beef handled in several forms, each chosen to show a different register of richness, texture, and presentation. Vaca Vieja rib-eye is there for depth and maturity; rotisserie steamship American wagyu brings scale and spectacle; wagyu shortribs push into dense, savory richness; wagyu tartare on a shiso leaf adds freshness to the frame; and Beefsteak tomato tartare shows that the same structural thinking can move outside meat as well. The throughline is a menu built for sharing, with each dish carrying its own weight on the table.
