i. Biography
In Detroit’s suburbs, a pantry stocked by hunters and gardeners taught Amy Machnak to treat sourcing as part of the work, not a preface to it. The lesson was simple and useful: read the season, use what is ready, and build flavor from the ingredients themselves. That way of thinking carried into pastry and later into food writing and recipe editing, where foraging and farm-to-table practice gave her a working vocabulary that moved between kitchen and page.
The Climb
Amy Machnak trained at Schoolcraft Culinary College and San Francisco State University, two stops that shaped both technique and editorial range. From there, pastry kitchens became the next testing ground, where repetition, precision, and tight timing set the pace. She went on to work as pastry chef at Tribute in outside Detroit, pastry chef at Mako in Beverly Hills, and head pastry chef at Boulevard restaurant in San Francisco (2001–2002). Across those roles, the work shifted from execution to oversight, with each station demanding the same control of timing, texture, and finish that pastry rewards. Today, Amy is recipe editor of Sunset.
