i. Biography
Executive Chef at Aqua in Torbole, Andrea Mura works in a register built from repetition, discipline, and incremental gain. The food side of his biography is not framed as aspiration so much as practice: in Sardinia, Being Italian meant great food was already part of daily life, and that early proximity shaped the way Mura approached the trade.
Coming Up
Technical grounding came first at Forte Village cooking school, where Andrea Mura took the structure that would support a career moving through high-pressure rooms. The progression from training into service was steady and deliberate: Junior Sous Chef at Aqua Restaurant Group (2014–2015) placed him in an environment defined by pace and exacting standards, where craft had to hold under scrutiny. The next steps widened both responsibility and range. Andrea Mura moved from Sous Chef at Harrods (2015–2016) to Head Chef at Soho House & Co (2016–2017), then Head Chef at D&D London (2017–2019), Executive Chef at The Trafalgar Tavern (2019–2020), Chef Director at Sister Jane (2020–2021), and Regional Executive Chef at Aqua Restaurant Group (2021–2024). Across those roles, the work shifted from execution to leadership, with each post adding another layer to the same kitchen language. That sequence culminated in Executive Chef of Il Gattopardo Restaurant (since 2024).

Signature
The signature dishes point to a chef working with contrast, texture, and deliberate tension. Negroni Jelly brings sharpness and restraint into the same frame; Melon BBQ sauce sets sweetness against smoke; Buffalo Ricotta Gnocchi leans into softness and comfort; and Ink risotto, red prawns, goat cheese, tomato & parsley reads as coastal composition, with each element carrying its own weight. Orange & Polenta Ciambellone closes that set with citrus and grain, a finish that sits between rustic form and clean balance. Taken together, those plates show a kitchen mind that values composition as much as flavour. The range reflects a career shaped across different houses and service rhythms, while still staying close to the fundamentals that were already there at the start.
In Their Words “Being Italian, great food has naturally played a major role in my life.”
