Anika Madsen works the line at Iris in Rosendal, Norway, where expedition dining is shaped by weather, remoteness, and the practical demands of cooking at the edge of the map. As the Danish head chef, Madsen treats distance as part of the kitchen’s operating conditions, not as a backdrop. Long supply lines, narrow delivery windows, and the absence of easy conveniences force the work toward discipline, improvisation, and a constant check on what can actually be made on site. In that setting, the chef’s job is as much about keeping a team steady under constraint as it is about building the menu. Place carries as much weight as technique in the identity of Iris.
