Arvid Rosengren runs King Street Sommeliers, a company focused on cellar management, restaurant wine program development, and wine-related events. The Path
Restaurant-floor work gave the trade its first hard structure when Arvid Rosengren worked as sommelier at busy restaurant in Copenhagen, Denmark from 2008. In that setting, theory had to survive service. Regions, vintages, producers, timing, tone, and table management all had to function while the room was moving. Wine direction across multiple rooms broadened the craft from bottle service to program design when Rosengren became Wine Director at an ambitious group of almost a dozen establishments in Copenhagen, Denmark until 2014. A list had to become many lists, each suited to a different room, pace, and guest. The role required systems, purchasing judgment, and a point of view that could hold across more than one dining room. New York service added another register when Rosengren became a team member at Charlie Bird from 2014. The city’s dining culture asks for fluency under scrutiny: wine knowledge, cellar awareness, and guest communication moving at restaurant speed. The move continued a career built less around display than around service in changing contexts. The current work remains divided across linked forms of the same trade. Arvid is founder of King Street Sommeliers since 2015, co-founder of Legacy Records since 2017, and Global Ambassador of Vintec since 2020. Each role depends on the sommelier’s core task: selecting, storing, explaining, and serving wine so that it fits the room, the collection, or the occasion.
The Work Today
Private cellar and restaurant wine work require different applications of the same discipline. In 2015, Rosengren founded King Street Sommeliers; he remains its founder and works as Private Cellar Advisor at King St Sommeliers. The company is focused on cellar management, restaurant wine program development, and wine-related events, where judgment matters as much as knowledge: what to hold, what to open, how to organize a cellar, and how to make a list useful to staff and guests. Cellar management is stewardship over time. Restaurant wine program development is structure in public: identity, balance, buying, pricing, and service all have to meet in a list that can be used during a shift. Wine-related events return the work to direct communication, where information must support the occasion rather than crowd it. In each setting, Rosengren’s practice treats wine neither as inventory alone nor as decoration, but as something managed, interpreted, and put into use. The working definition is concise: “The sommelier these days is a curator, interpreter and communicator.” In that formulation, Rosengren gives the trade its order of operations. Curator: selection has consequences. Interpreter: complexity has to be made legible. Communicator: expertise is only finished when the guest, collector, or team can act on it.
