The Ascent
Dining-room technique often starts before the cellar: station discipline, table pacing, and the ability to read a room. At Rice University in Houston, Texas, Belinda Chang worked as headwaiter at the Rice University Faculty Club while studying at Rice University, building the service floor habits that would later support wine work at higher volume and higher scrutiny. Captain work at Café Annie in Houston, Texas, added another layer: command of section flow, guest communication, and the handoff between kitchen, dining room, and bottle. The move to Charlie Trotter's in Chicago, Illinois, placed Chang in roles as sommelier and Wine Director, where service leadership and cellar responsibility were joined in a room known for exacting standards. The General Manager and Wine Director post at The Fifth Floor in San Francisco, California, from 2002 required the combined craft of list direction, staff management, and floor execution. Chicago followed with wine and Service Director work at Osteria Via Stato and Corporate Director of wine and spirits work at Cenitare, extending the remit from a single dining room to broader beverage oversight. Wine service in New York City demands precision under pressure: inventory, language, pacing, and staff calibration all have to hold. From 2007 to 2011, Chang served as wine and Service Director at The Modern, then continued as General Manager and Wine Director at The Monkey Bar. Beverage direction at Culinary Concepts by Jean-Georges and champagne education at LVMH Moet Hennessy further placed her work across restaurant operations, brand education, and guest-facing wine culture. Managing Partner work at Maple & Ash in Chicago from 2015 to 2017 brought the same service-and-wine discipline back into a large-format restaurant setting. Today, that practice continues through Belinda Chang LLC, where the work is built around dining, wine, and experience design rather than a conventional restaurant post.
Present Day
Modern wine work is not limited to the formal seated tasting. As a lifestyle expert and restaurateur, Belinda Chang frames service as experiential retail: structured, guest-aware, and built to move beyond the standard pour-and-talk format. Her position is direct: “We all get invited to sit-down tastings in beautiful places, but I’m tired of that,” she says. “I want people to be more creative. This is experiential retail. This is the game—so let’s go.”
