A career built in serious kitchens can be read in the roles it earns and the pace at which those rooms are kept in order. Ben Coombs moved into sharper view as head chef at Rochelle Canteen in Shoreditch from 2020, a post that put his cooking under daily scrutiny and gave his name greater reach. From there, responsibility broadened: today, he is Executive Chef of derWaldfrieden and Executive Chef of das asam. The progression is measured, not flashy — a sequence of appointments that points to consistency, command, and trust.
