The Team Challenge Trophy at the South East Asia leg of the Diageo Reserve World Class competition marks a competition standard: a drink made under scrutiny, judged for clarity, control, and service intelligence. In Boo Jing Heng’s case, that recognition follows a working education built through hotel management, part-time F&B shifts, and floor practice with real guests. The service base came first; the accolades came after the timing, room awareness, and bartending techniques learned on the job. The move into Jigger & Pony (Singapore) came through a practical search rather than a polished résumé. Boo Jing Heng found the bar online while looking for a serious place to learn, with no bar experience and a clear appetite for the work. What followed was the usual trade conversion: repetition into judgment, enthusiasm into control, and daily service into usable technique.
The Climb
Serious cocktail rooms build bartenders through pressure, pace, and standards held over many services. Early in Boo Jing Heng’s career, Boo worked as Senior Bartender at Jigger & Pony in Singapore from 2012, building a foundation behind one of the city’s defining cocktail bars. The role required polished mise en place, a steady hand under pressure, and the ability to make each drink feel considered even when the room was moving quickly. At Jigger & Pony, craft sat in the working details: glassware, ice, dilution, balance, and the exchange between bartender and guest. Boo Jing Heng’s background in hotel management and part-time F&B learning gave him a hospitality base; the bar sharpened that base into technique. On-the-job bartending methods and Japanese bartending techniques became part of the working vocabulary, used for precision and attention rather than display.
Today
Contemporary bar work often depends on translation: taking a familiar structure and adjusting it without losing the reference point. Boo Jing Heng’s work gathers hotel management, part-time F&B learning, Japanese bartending techniques, competition discipline, and a history of building both signature and customized drinks. The through-line is not novelty for its own sake, but control over how an idea is tightened, shifted, or clarified in the glass. One signature expression is the gin and tonic martini, a gin and tonic that is strong like a martini and does not have bubbles. The drink keeps the reference of the highball while moving it toward the structure and force of a martini. Its interest is in the adjustment: refreshment pulled into a stronger format without erasing the original cue. Competition practice adds a separate discipline to bar service. A drink has to be presented cleanly, executed accurately, and made legible to judges. For Boo Jing Heng, the competition register and the nightly service register meet in the same requirements: clarity, consistency, and the ability to communicate through a glass.
