She says, “I always wanted to be a chef.” In practice, that means precision, patience, and the hand-eye control needed to build work that may be carried into a celebration and cut apart hours later. Bronwen Weber also works in clay, making animal sculptures fired with glazes, then painted and waxed; the material changes, but the same focus on surface, shape, and finish remains.
The Path
Bronwen Weber started with a decorator’s eye and steady hands at First bakery in Acton, Ontario, where bakery work and production rhythm shaped the base of the craft. She then moved into teaching as a Pastry Chef Instructor at Texas Culinary Academy (Le Cordon Bleu) in Austin, Texas, carrying detail-driven technique into the classroom. She also brought that same attention to Frosted Art, a setting that sits squarely between design and confection. Today, Bronwen is the owner and cake business operator of Bronwen Cakes, where the roles of instructor, decorator, sculptor, and maker meet in one practice.

Bronwen Cakes in Dallas is where her style is most visible: “I am known for over-the-top cakes — giant-size cakes, crazy sculpted cakes — and for my obsessive love of pink.” The scale matters here, but so does control; the work turns cake into a built object, shaped with enough structure to read as both dessert and design.
