The Climb
Bryn Williams’s career reads as accumulation: bakery discipline, formal study, London service, and later the authority to carry that experience into his own work. Denbigh bakery in Denbigh, Wales gave him the repeatable basics of early starts and exact execution as a cook / bakery worker. Coleg Llandrillo Cymru followed, where those basics were carried into structured study. The kitchen line then widened the frame. Cafe Nicoise in Colwyn Bay, Wales, Criterion in London, England, and Le Gavroche in London, England as sous chef each added a different measure of pace and standard. Patisserie Millet in Paris, France (2001) and Hotel Negresco in Nice, France (2001) brought further refinement, with precision and finish built into the setting itself.
