The Climb
Food Director Emeritus at Bon Appétit in New York City, Carla Lalli Music built a career in the working overlap between restaurant service, editing, teaching, and recipe development. The value of that path sits in the mechanics: knowing how food is made, how it is edited for print, how it is taught, and how it holds up when someone else cooks it. She later became general manager at Shake Shack, adding another layer of operational discipline to a résumé rooted in the practical side of the trade. Her own account is plain about the route in: "My first jobs out of college was in editing, writing that I thought was kind of a waste of time." Brown University led into the pace of professional kitchens, first as line chef at Rocco DiSpirito, then as kitchen manager at Rocco DiSpirito.
