i. Biography
A native Vermonter, Chris Eddy works from a place that gave him room to build a kitchen without a playbook, then keep tightening the work year after year. The register is plain, not ornamental: local conditions, seasonal discipline, and a style shaped by staying put long enough to let the menu answer to its setting.
The Climb
Today, Chris Eddy is Executive Chef of The Restaurant at Winvian Farm, a role he has held since 2006. Over that span, the kitchen has been shaped from within, with the farm’s own cadence guiding the menu rather than any imported formula. The result is not a quick rise but a long, cumulative deepening of practice, where the place and the plate have continued to inform each other.
Today
What defines Eddy’s day-to-day work is control without excess. At The Restaurant at Winvian Farm, the menu is given room to move with the seasons and with the garden he asked for and received. That kind of latitude can lead a kitchen toward overstatement; here it is used for precision, balance, and a strict reading of what belongs. The plate, in his hands, stays tied to the farm, the field, and the idea that freshness should be exact, not generic.
Signature
Chris's signature dishes include handmade parsnip ravioli with greens, spinach, cauliflower and beet salad with citrus segments, endive, and watercress. One works through softness and earthiness, with handmade pasta carrying the weight of the vegetables around it. The other is built on contrast and line: root, leaf, and citrus arranged for brightness and structure. Both rely on proportion and texture more than display, and both show a kitchen comfortable with restraint.
In Their Words “There was no playbook when I came here. I am so grateful to [owners] the Smith family. They have backed me every step of the way. I said I wanted a garden, they gave me a garden.”
Recognition
Daily menus at the farm have also featured beet salad with citrus segments, endive, and watercress. The recognition is in the repetition of exact ingredients and in the consistency of a menu that keeps returning to the same grounded logic: handmade pasta, clean produce, and combinations that read as deliberate rather than decorated. That steadiness is its own form of distinction.
