Christian Spalvieri is the Executive Chef at Palazzo Ripetta in Rome, where he leads the culinary program for San Baylon and is also associated with Piazzetta Ripetta and the hotel’s rooftop dining. Official hotel and restaurant pages describe his cuisine as conscientious, contemporary Italian cooking, and third-party coverage reports that he took the helm in 2024 after experience in London and other kitchens in Italy.
