i. Biography
Christophe Cussac, born in Paris in 1955, trained at the École Hôtelière Jean Drouant and worked with Joël Robuchon from 1977 to 1982 at establishments including Hôtel Concorde Lafayette, Hôtel Nikko, and Jamin, before earning two Michelin stars at his parents' Abbaye Saint-Michel in Tonnerre (1987) and La Réserve de Beaulieu (1999). Since 2004, he has served as Executive Chef at Hôtel Métropole Monte-Carlo, overseeing Joël Robuchon restaurant (two Michelin stars in 2008) and, since 2023, Les Ambassadeurs by Christophe Cussac, which received two Michelin stars in 2024.
