Christophe De Lellis is a Paris-born chef currently leading Mamani in Dallas, where the restaurant’s official site identifies him as Executive Chef and notes that his cooking is inspired by his Italian grandmother, Mamani. Before Dallas, he spent many years leading the kitchen at Joël Robuchon in Las Vegas, a role described by Mamani and other reporting as a long tenure at Robuchon’s three-Michelin-starred restaurant.
