i. Biography
A 2020 Michelin Guide one star for Maison Hache in Eygalières, France, places the restaurant within a line of French kitchens where formal training, Paris haute cuisine discipline and product-led cooking carry measurable weight. Christopher Hache’s route into that recognition ran through Lucas-Carton, the Bristol Hotel and the kitchens of Hôtel de Crillon in Paris; born in Le Chesnay and trained at Lycée Auguste Escoffier, he developed a language grounded in classical French culinary savoir-faire, international influences and bold flavours.
The Climb
Formal French training gave the early structure: at Lycée Auguste Escoffier, the technical base preceded entry into Paris haute cuisine. Christopher Hache worked as a trainee and early-career cook under Alain Senderens at Lucas-Carton from 2003, then cooked alongside Éric Fréchon at Le Bristol from 2006–2009, before taking sous-chef and chef adjoint responsibilities at La Grande Cascade from 2009. Hotel dining at the top Paris level requires consistency across service, brigade and room expectations. In 2010, Hache became chef at Hôtel de Crillon, later leading L’Ecrin at Hôtel de Crillon, carrying forward the precision and control formed in those earlier houses. Today, Christopher is chef of Maison Hache and chef of Le Bistrot du Brau.
Today
The cooking is built on seasonality, taste, creativity and product-focused essentials. At Maison Hache, that means the product remains the working center of the plate rather than an accessory to technique.
Signature
The named repertoire shows the range of the house register: The Tourtatouille, Camargue oysters with artichokes barigoule, Alpilles lamb with candied aubergine, and Chou” with elderberry ice cream, hazelnut praline and hot chocolate. Each sits inside a French product-and-technique frame, with regional references handled through precise composition rather than excess.
Recognition
Recognition has attached to the kitchen work at both Hôtel de Crillon and Maison Hache. Christopher's honors include One Michelin star for L’Ecrin (2018) and 3 hats for L’Ecrin.
